my easy-as-pie quiche   {copyrighted recipe~dani harris} ©

makes one 9-inch deep dish quiche {6 to 8 slices}
or mini-quiche depending on the size of your tart pans
or mini-crustless quiche depending on the size of  your muffin or mini-muffin pans
or one round/square cake pan without crust
freezes well and microwaves for RE-HEATING ONLY
double ingredients for two 9-inch deep dish quiche or one 9″ by 12″ crustless quiche

ingredients:

5 large eggs
8 ounces cottage cheese {or ricotta but we prefer cottage cheese}
8 ounces colby-jack cheese, grated
{or other hard cheese of your choice, but not mozzarella or ricotta/soft cheeses}
1/4 cup (half a stick) unsalted butter, melted
1/4 cup all-purpose flour
1 & 1/2 tsp baking powder {or one tablespoon}
1/4 tsp salt {if you use margarine or salted butter, do not add additional salt}

Optional Ingredients -

4 ounces swiss cheese for topping, finely grated
8 to 12 ounces frozen chopped spinach {this is my family’s favorite}
OR one to 1 & 1/2 cup chopped vegetables of your choice (mushrooms are really good!)
AND/OR 1 cup chopped cooked bacon or sausage or ham
OR jalepeno or other hot pepper to taste, chopped

pie crust, if desired {frozen pre-made crusts are perfectly fine}

Directions -

Preheat oven to 350 degrees
Use a deep-dish pie pan or round/square cake pan. Spray  generously  with a vegetable oil spray like Pam. (Or use a partially pre-baked [for only 5 minutes] deep-dish pie crust.)

In a small bowl, whisk together flour, baking powder and salt. Set aside.

In a large bowl, use a wooden spoon to lightly scramble the eggs. Add the melted butter and cottage cheese and the colby-jack cheese and stir well. Add the flour mixture and stir until well-blended. If using spinach, make sure to squeeze out as much excess water as you can before adding to egg mixture. Add chopped vegetables and/or meat and stir until combined.

Pour mixture into pan. Place pan on foil-lined baking sheet. Bake in a preheated 350 degree oven for about 45 minutes. Start checking at 30 minutes. When the quiche is starting to brown and setting (5 to 10 minutes before done) you can sprinkle the swiss cheese over top. Quiche is done when golden brown and a knife inserted in center comes out clean. Let set 15 minutes before cutting into 6 to 8 slices (round) or 6 to 10 squares. Freezes well and reheats well in microwave or oven.

  1. Wow, never heard of a pi-ku before. Very clever way to weave that in. Yours is adorable, and the recipe looks yummy. I will have to give it a try and report back!
